28 Jun 5 Minute Meal of the Week: Avocado & Bean Bread Thins
No need to worry about reheating meat, this vegetarian meal makes the perfect healthy work lunch! You can make it in 5 minutes before leaving the house.
Ingredients:
- 3 bread thins
- 210g can of red kidney beans
- 1 tbsp finely chopped dill
- ½ Lemon
- 1 Tomato
- 1 small Avocado
Instructions:
- Drain the kidney beans.
- Mash the beans, dill and a squeeze of lemon juice with a fork.
- Chop the tomato and stir into the mix.
- Scoop the avocado into a bowl and mash with another squeeze of lemon juice.
- Spoon the beans over the bread thins and spoon the avocado on top.
