5 Minute Meal of the Week: Avocado & Bean Bread Thins

No need to worry about reheating meat, this vegetarian meal makes the perfect healthy work lunch! You can make it in 5 minutes before leaving the house.

 

Ingredients:

 

  • 3 bread thins
  • 210g can of red kidney beans
  • 1 tbsp finely chopped dill
  • ½ Lemon
  • 1 Tomato
  • 1 small Avocado

 

Instructions:

 

  1. Drain the kidney beans.
  2. Mash the beans, dill and a squeeze of lemon juice with a fork.
  3. Chop the tomato and stir into the mix.
  4. Scoop the avocado into a bowl and mash with another squeeze of lemon juice.
  5. Spoon the beans over the bread thins and spoon the avocado on top.
