5 Minute Meal of the Week: Caesar Salad with Crispy Chicken

Looking for something light and tasty now the weather’s getting warmer? This recipe delivers in just 5 minutes leaving you more time for fun in the sun!

 

Ingredients:

 

  • 50g Parmesan + extra to serve
  • 8x tbsp Mayonnaise
  • 1 Lemon 
  • 1tblsp Worcestershire sauce
  • 1 Garlic clove
  • 4x Leftover crispy chicken pieces
  • 50g Croûtons
  • 1x Cos lettuce

 

Instructions:

 

  1. Grate the Parmesan and the garlic.
  2. In a large bowl mix the mayonnaise, juice from the lemon, Worcestershire sauce, grated Parmesan and garlic and season.
  3. Slice the leftover crispy chicken pieces and chop the cos lettuce. Only add the chicken slices, croutons and lettuce when you’re ready to eat so it doesn’t go soggy! Mix well and serve with an extra sprinkling of Parmesan.
