5 Minute Meal of the Week: Cannellini Bean Salad

Want a quick and easy way to get in THREE of your five a day? Try this salad for an office lunch or a tasty dinner:

 

Ingredients:

 

  • 140g Cherry tomatoes
  • 1 Red onion
  • 3x 200g cans of cannellini beans
  • 1tbsp Red wine vinegar
  • Small bunch of basil

 

Instructions:

 

  1. Chop the cherry tomatoes in half.
  2. Thinly slice the red onion.
  3. Drain and rinse the cannellini beans.
  4. Combine the halved cherry tomatoes, sliced red onion and rinsed cannellini beans with the red wine vinegar and mix.
  5. Roughly tear the basil and season before serving.
