23 Aug 5 Minute Meal of the Week: Cannellini Bean Salad
Want a quick and easy way to get in THREE of your five a day? Try this salad for an office lunch or a tasty dinner:
Ingredients:
- 140g Cherry tomatoes
- 1 Red onion
- 3x 200g cans of cannellini beans
- 1tbsp Red wine vinegar
- Small bunch of basil
Instructions:
- Chop the cherry tomatoes in half.
- Thinly slice the red onion.
- Drain and rinse the cannellini beans.
- Combine the halved cherry tomatoes, sliced red onion and rinsed cannellini beans with the red wine vinegar and mix.
- Roughly tear the basil and season before serving.
