18 Oct 5 Minute Meal of the Week: Coronation Chicken Salad
Had a roast at the weekend? Your roast chicken leftovers can continue to provide you with tasty meals during the week! Try this classic, delicious salad to fuel your busy week.
Ingredients:
- 1 Courgette
- 1 Pack of Fresh Coriander
- ½ Lemon
- 3 tbsp Greek Yoghurt
- 1 tsp Curry Powder
- 1 tsp Mango Chutney
- 250g Pre-Cooked Grain Pouch
- 150g Leftover Roast Chicken
- 2 Roasted Red Onions
Instructions:
- Peel the courgette into ribbons and chop the coriander.
- Zest the lemon and combine with the yoghurt, curry powder and mango chutney in a bowl. Season.
- Add the grains, chicken, onions, courgette ribbons and most of the chopped coriander. Stir.
- Divide into two bowls or containers and serve with the remaining coriander and a squeeze of lemon.
