5 Minute Meal of the Week: Coronation Chicken Salad

Had a roast at the weekend? Your roast chicken leftovers can continue to provide you with tasty meals during the week! Try this classic, delicious salad to fuel your busy week.

 

Ingredients:

 

  • 1 Courgette
  • 1 Pack of Fresh Coriander
  • ½ Lemon
  • 3 tbsp Greek Yoghurt
  • 1 tsp Curry Powder
  • 1 tsp Mango Chutney
  • 250g Pre-Cooked Grain Pouch
  • 150g Leftover Roast Chicken
  • 2 Roasted Red Onions

 

Instructions:

 

  1. Peel the courgette into ribbons and chop the coriander.
  2. Zest the lemon and combine with the yoghurt, curry powder and mango chutney in a bowl. Season.
  3. Add the grains, chicken, onions, courgette ribbons and most of the chopped coriander. Stir.
  4. Divide into two bowls or containers and serve with the remaining coriander and a squeeze of lemon.
