5 Minute Meal of the Week: Couscous Salad

5 Minute Meal of the Week: Couscous Salad

You can always count on couscous for a speedy meal. Made from semolina flour, couscous is technically a type of pasta!

 

Ingredients:

 

  • 100g Couscous
  • 100ml Vegetable stock
  • 50g Frozen peas
  • 50g Broad beans
  • Fresh mint
  • Fresh basil

 

Instructions:

 

  1. Make up 100ml of vegetable stock. Add to a bowl of the couscous and cover for 5 minutes until the stock has been absorbed.
  2. Meanwhile, simmer the frozen peas, and broad beans in water for 3 minutes. Drain.
  3. Fluff the couscous with a fork and combine with the couscous, peas, broad beans and pepper.
  4. Roughly tear the fresh mint and basil to serve
