5 Minute Meal of the Week: Goat’s Cheese Bread Thins

Have the fanciest, tastiest lunch in the office or enjoy this healthy lunch at home! Either way, it only takes five minutes!

 

Ingredients:

 

  • 3 Bread Thins
  • 50g Soft Goat’s Cheese
  • 1 Cucumber
  • 3 Tomatoes
  • 4 Olives
  • 2 Handfuls of Rocket

 

Instructions:

 

  1. Slice the cucumber and tomatoes thinly and dice the olives.
  2. Cut the bread thins into triangles and spread over the goat’s cheese.
  3. Top the bread thins with the sliced cucumber and tomatoes, diced olives and the rocket.
