5 Minute Meal of the Week: Homemade Noodle Pot

5 Minute Meal of the Week: Homemade Noodle Pot

Step aside ready-made noodles! This cheaper, healthier, tastier alternative can be made in minutes!

 

Ingredients:

 

  • 40g Nest of dried vermicelli rice noodles
  • ½ tsp Yeast extract
  • 1-2 tsp Soy sauce
  • ½ Red chilli 
  • 1 tsp Ginger
  • 1 small carrot
  • 25g Frozen petit pois, defrosted
  • 25g baby spinach leaves, roughly chopped
  • ½ Lime, zested and juiced

 

Instructions:

 

  1. Peel the ginger and carrot.
  2. Finely chop the red chilli and ginger.
  3. Roughly chop the spinach
  4. Use the vegetable peeler to slice the carrot into ribbons.
  5. Put the noodles, yeast extract, soy sauce, red chilli, ginger, carrot, petit pois and spinach in a heatproof jar if you have one. If not, use a heatproof bowl.
  6. Refrigerate and take your noodle jar to work where you can pour enough boiling water to cover the ingredients (about 300ml), cover with the lid (or cling film if using a bowl) and leave to soak for 10 minutes. (Yes we know it’s not technically 5 minutes but you don’t want crunchy noodles!)
  7. Stir in the lime zest and juice and season to serve.
