17 May 5 Minute Meal of the Week: Homemade Noodle Pot
Step aside ready-made noodles! This cheaper, healthier, tastier alternative can be made in minutes!
Ingredients:
- 40g Nest of dried vermicelli rice noodles
- ½ tsp Yeast extract
- 1-2 tsp Soy sauce
- ½ Red chilli
- 1 tsp Ginger
- 1 small carrot
- 25g Frozen petit pois, defrosted
- 25g baby spinach leaves, roughly chopped
- ½ Lime, zested and juiced
Instructions:
- Peel the ginger and carrot.
- Finely chop the red chilli and ginger.
- Roughly chop the spinach
- Use the vegetable peeler to slice the carrot into ribbons.
- Put the noodles, yeast extract, soy sauce, red chilli, ginger, carrot, petit pois and spinach in a heatproof jar if you have one. If not, use a heatproof bowl.
- Refrigerate and take your noodle jar to work where you can pour enough boiling water to cover the ingredients (about 300ml), cover with the lid (or cling film if using a bowl) and leave to soak for 10 minutes. (Yes we know it’s not technically 5 minutes but you don’t want crunchy noodles!)
- Stir in the lime zest and juice and season to serve.
