13 Oct 5 Minute Meal of the Week: Hummus & Avocado Pitta
Looking for an exciting vegan lunch to bring to work that you don’t have to worry about refrigerating or heating up? Look no further!
Ingredients:
- 1 Wholegrain Pitta
- 2 tbsp Hummus
- ½ Avocado
- ¼ Red Onion
- Handful of Cherry Tomatoes
- Handful of Coriander
- ¼ Lemon
Instructions:
- Coat the inside of the pitta with hummus.
- Dice the avocado, slice the red onion, halve the cherry tomatoes and chop the coriander. Fill the pitta.
- Squeeze over the lemon juice to serve.
