5 Minute Meal of the Week: Hummus & Avocado Pitta

Looking for an exciting vegan lunch to bring to work that you don’t have to worry about refrigerating or heating up? Look no further!

 

Ingredients:

 

  • 1 Wholegrain Pitta
  • 2 tbsp Hummus
  • ½ Avocado
  • ¼ Red Onion
  • Handful of Cherry Tomatoes
  • Handful of Coriander
  • ¼ Lemon

 

Instructions:

 

  1. Coat the inside of the pitta with hummus.
  2. Dice the avocado, slice the red onion, halve the cherry tomatoes and chop the coriander. Fill the pitta.
  3. Squeeze over the lemon juice to serve.
