5 Minute Meal of the Week: Mediterranean Pita Pockets

Don’t worry about rushing with this one! This recipe can easily be prepared within in 5 minutes so be careful when chopping!

 

Ingredients:

 

  • 1 Cucumber
  • 2 Large Tomatoes
  • 1 Bunch of fresh parsley
  • 120g Olives
  • ½ Red Onion
  • 200g Feta
  • 300g Hummus
  • 4 Pita Pockets

 

Instructions:

 

  1. Chop the cucumber, parsley and olives and put in a medium sized bowl. Slice the tomatoes and red onion and add to the bowl.
  2. Crumble the feta into the bowl.
  3. Spread the hummus inside the pita pockets.
  4. Stuff the pockets with the vegetable mix.
