5 Minute Meal of the Week: Mozzarella Salad

5 Minute Meal of the Week: Mozzarella Salad

Add a bit of colour to your lunch with this healthy, flavour packed salad recipe!

 

Ingredients:

 

  • 100g Lamb’s Lettuce/Baby Spinach
  • ½ Cucumber
  • 100g Semi-dried Tomatoes in Oil
  • 1 Yellow Pepper
  • 125g Mozzarella
  • 2 tbsp Pumpkin Seeds
  • 2 tbsp Balsamic Vinegar

 

Instructions:

 

  1. Peel the cucumber into ribbons.
  2. Deseed the pepper and slice into thin strips.
  3. Wash the salad leaves according to instructions, then combine in a bowl with the cucumber, pepper and semi-dried tomatoes. Toss together and divide between two bowls (or containers if you’re transporting to the office).
  4. Tear the mozzarella into pieces and divide between the bowls.
  5. Scatter over the pumpkin seeds.
  6. Drizzle over the balsamic vinegar and 1 tbsp of oil from the semi-dried tomatoes.
