15 Nov 5 Minute Meal of the Week: Mozzarella Salad
Add a bit of colour to your lunch with this healthy, flavour packed salad recipe!
Ingredients:
- 100g Lamb’s Lettuce/Baby Spinach
- ½ Cucumber
- 100g Semi-dried Tomatoes in Oil
- 1 Yellow Pepper
- 125g Mozzarella
- 2 tbsp Pumpkin Seeds
- 2 tbsp Balsamic Vinegar
Instructions:
- Peel the cucumber into ribbons.
- Deseed the pepper and slice into thin strips.
- Wash the salad leaves according to instructions, then combine in a bowl with the cucumber, pepper and semi-dried tomatoes. Toss together and divide between two bowls (or containers if you’re transporting to the office).
- Tear the mozzarella into pieces and divide between the bowls.
- Scatter over the pumpkin seeds.
- Drizzle over the balsamic vinegar and 1 tbsp of oil from the semi-dried tomatoes.
