5 Minute Meal of the Week: Mozzarella & Salami Ciabatta

Take advantage of WFH with exciting, HOT lunches like this Mediterranean lunch in five minutes!

 

Ingredients:

 

  • 1 Small Ciabatta
  • 1 Small Fennel Bulb
  • 1tbsp Olive Oil
  • Handful of Rocket
  • 1 Clove of Garlic, Peeled
  • ½ Mozzarella Ball
  • 8 Salami Slices
  • 1 Lemon

 

Instructions:

 

  1. Cut the ciabatta into 4 and toast.
  2. Trim and thinly slice the fennel bulb. 
  3. Toss the sliced fennel with 2 tsp of olive oil, seasoning and the rocket.
  4. Rub the remaining oil on the sliced ciabatta and then rub with garlic.
  5. Tear the mozzarella into bite-sized pieces and scatter over the ciabatta slices alongside the salami slices.
  6. Top with the salad and serve with lemon wedges.
