06 Sep 5 Minute Meal of the Week: Mozzarella & Salami Ciabatta
Take advantage of WFH with exciting, HOT lunches like this Mediterranean lunch in five minutes!
Ingredients:
- 1 Small Ciabatta
- 1 Small Fennel Bulb
- 1tbsp Olive Oil
- Handful of Rocket
- 1 Clove of Garlic, Peeled
- ½ Mozzarella Ball
- 8 Salami Slices
- 1 Lemon
Instructions:
- Cut the ciabatta into 4 and toast.
- Trim and thinly slice the fennel bulb.
- Toss the sliced fennel with 2 tsp of olive oil, seasoning and the rocket.
- Rub the remaining oil on the sliced ciabatta and then rub with garlic.
- Tear the mozzarella into bite-sized pieces and scatter over the ciabatta slices alongside the salami slices.
- Top with the salad and serve with lemon wedges.
