5 Minute Meal of the Week: Pan-Seared Salmon With Tomatoes
This recipe from Shape is quick, healthy and tasty! “The salmon provides lean protein and omega-3 fats that fight ageing and support heart health…and antioxidants from basil, balsamic vinegar, and tomatoes also fight ageing and inflammation,” says Michelle Davenport, a nutritionist specialising in anti-aging at the University of California, San Francisco.
Ingredients:
x1 Fillet of salmon
65g Couscous
120ml Vegetable stock
60g Cherry tomatoes
120ml Balsamic vinegar
Instructions:
- Halve the cherry tomatoes.
- Heat a drizzle of olive oil in a wide based frying pan over a medium-high heat.
- Season the fillet of salmon with salt and pepper and, once the oil is hot, sear the fillet skin-side down.
- Meanwhile, add the stock to the couscous in a bowl, stir and cover with a tea towel or plate for 5 minutes.
- Flip the salmon when opaque more than halfway through. Add the halved cherry tomatoes and sauté.
- Fluff the couscous and spread out on a plate. Top with the salmon and tomatoes.
- Pour the balsamic vinegar into the hot pan and reduce for 15 seconds over a medium heat. Pour over the dish and top with fresh basil.
