01 Mar 5 Minute Meal of the Week: Pea & Mint Soup
This recipe from Good Food will have you feeling like a Michelin star chef but it only takes 5 minutes! Swap the peas and mint for 500g of tomatoes, 2 deseeded red peppers, 1 garlic clove, 1tbsp of red wine vinegar and 1tsp of sugar and you’ve got a completely different but equally delicious soup.
Ingredients:
450g Bag of frozen peas
Small handful of chopped fresh mint
1tbsp of vegetable bouillon powder
Cream to serve
Instructions:
- Boil a kettle.
- Tip the frozen peas into a blender then pour over the hot water from the kettle.
- Allow the peas to defrost before reserving one tsp of peas.
- Add the mint (save a pinch for later!) and bouillon powder and blitz until smooth.
- Serve with cream and the reserved peas and mint.
