21 Jun 5 Minute Meal of the Week: Prawn & Coconut Soup
This flavoursome soup is the perfect meal to spice up your mid-week meals.
Ingredients:
- 3 tbsp thai green curry paste
- 400ml can of coconut milk
- 150g cooked prawns
- 250g packet courgetti
Instructions:
- Heat 1tbsp of oil in a frying pan on a medium heat. Add the curry paste and cook for 1 minute.
- Add the coconut milk and simmer for a few minutes.
- Add the prawns and courgetti and cook for another minute to warm through.
- Divide between two bowls to serve.
