5 Minute Meal of the Week: Prawn & Coconut Soup

This flavoursome soup is the perfect meal to spice up your mid-week meals.

 

Ingredients:

 

  • 3 tbsp thai green curry paste
  • 400ml can of coconut milk
  • 150g cooked prawns
  • 250g packet courgetti

 

Instructions:

 

  1. Heat 1tbsp of oil in a frying pan on a medium heat. Add the curry paste and cook for 1 minute.
  2. Add the coconut milk and simmer for a few minutes.
  3. Add the prawns and courgetti and cook for another minute to warm through.
  4. Divide between two bowls to serve.
