12 Apr 5 Minute Meal of the Week: Pressure Cooker Chicken, Broccoli and Rice
If you don’t already have a pressure cooker, it will revolutionise your speedy weekday meals! Check out this filling recipe, cooked in just five minutes:
Ingredients:
- 1 Small onion
- Half a floret of broccoli
- 2 Cloves of garlic
- 2 Chicken breasts
- 2 tbls Butter/Margerine
- 150g Long grain rice
- 250ml Chicken stock
- 1tsp Garlic powder
- 100ml Milk
- 2 tbsp Plain flour
- 150g Grated Cheddar cheese
Instructions:
- Peel and chop the onion and broccoli and grate/finely chop the garlic.
- Cut the chicken into cubes.
- Set the broccoli to boil for 5 minutes.
- Set your pressure cooker to sauté and heat the butter/margarine.
- Add the onion, garlic and chicken and cook until the onion is translucent.
- Add the rice, stock and season with salt, pepper and garlic powder. Heat for 5 minutes.
- Whisk the milk and flour together in a small bowl and set aside.
- When the rice is cooked, stir in the milk and flour mix.
- Drain and add the broccoli and cheese and stir. Serve.
