5 Minute Meal of the Week: Pressure Cooker Chicken, Broccoli and Rice

If you don’t already have a pressure cooker, it will revolutionise your speedy weekday meals! Check out this filling recipe, cooked in just five minutes:

 

Ingredients:

 

  • 1 Small onion
  • Half a floret of broccoli
  • 2 Cloves of garlic
  • 2 Chicken breasts
  • 2 tbls Butter/Margerine
  • 150g Long grain rice
  • 250ml Chicken stock
  • 1tsp Garlic powder
  • 100ml Milk
  • 2 tbsp Plain flour
  • 150g Grated Cheddar cheese

 

Instructions:

 

  1. Peel and chop the onion and broccoli and grate/finely chop the garlic.
  2. Cut the chicken into cubes.
  3. Set the broccoli to boil for 5 minutes.
  4. Set your pressure cooker to sauté and heat the butter/margarine.
  5. Add the onion, garlic and chicken and cook until the onion is translucent.
  6. Add the rice, stock and season with salt, pepper and garlic powder. Heat for 5 minutes.
  7. Whisk the milk and flour together in a small bowl and set aside.
  8. When the rice is cooked, stir in the milk and flour mix.
  9. Drain and add the broccoli and cheese and stir. Serve.
