5 Minute Meal of the Week: Refried Bean Quesadillas

5 Minute Meal of the Week: Refried Bean Quesadillas

This recipe is perfect party food or simply an easy Friday night-in meal. As always, it only takes 5 minutes.

 

Ingredients:

 

  • 1 Onion
  • 2 Gralic cloves
  • 100g Cheddar cheese
  • 1tsp Cumin
  • 400g Kidney beans
  • 2tsp Smoked paprika
  • 8 Flour tortillas
  • Handful of coriander leaves
  • 200g Salsa
  • Soured cream to serve

 

Instructions:

 

  1. Finely chop the onion and garlic.
  2. Fry the onion and garlic in sunflower oil for 2 minutes.
  3. Meanwhile, grate the cheese.
  4. Add the cumin and cook for 1 minute.
  5. Drain and rinse the kidney beans and add with the paprika and a splash of water.
  6. Use a potato masher to mash the beans into a rough purée and season with salt and pepper.
  7. Spread the refried beans onto 4 of the tortillas. Top with the cheese, coriander and salsa and the remaining tortillas to make 4 sandwiches.
  8. Cook each sandwich for 1-2 minutes until the tortillas are crisp and the cheese is melting.
  9. Cut into quarters and serve with the soured cream.
