03 May 5 Minute Meal of the Week: Refried Bean Quesadillas
This recipe is perfect party food or simply an easy Friday night-in meal. As always, it only takes 5 minutes.
Ingredients:
- 1 Onion
- 2 Gralic cloves
- 100g Cheddar cheese
- 1tsp Cumin
- 400g Kidney beans
- 2tsp Smoked paprika
- 8 Flour tortillas
- Handful of coriander leaves
- 200g Salsa
- Soured cream to serve
Instructions:
- Finely chop the onion and garlic.
- Fry the onion and garlic in sunflower oil for 2 minutes.
- Meanwhile, grate the cheese.
- Add the cumin and cook for 1 minute.
- Drain and rinse the kidney beans and add with the paprika and a splash of water.
- Use a potato masher to mash the beans into a rough purée and season with salt and pepper.
- Spread the refried beans onto 4 of the tortillas. Top with the cheese, coriander and salsa and the remaining tortillas to make 4 sandwiches.
- Cook each sandwich for 1-2 minutes until the tortillas are crisp and the cheese is melting.
- Cut into quarters and serve with the soured cream.
