5 Minute Meal of the Week: Salad Wraps

Looking for a healthy, vegetarian lunch? This classic salad wrap is perfect!

 

Ingredients:

 

  • ¼ Carrot
  • ¼ Cucumber/Avocado2 tbsp Hummus
  • 1 Tortilla
  • 1 Lettuce leaf
  • 1 tbsp Tomato Salsa
  • Handful of Grated Cheddar

 

Instructions:

 

  1. Peel and grate the carrot and slice the cucumber/avocado into strips.
  2. Spread the hummus over the bottom third of the tortilla.
  3. Top with the lettuce leaf, grated carrot and sliced cucumber/avocado.
  4. Spoon over the salsa and sprinkle over the cheese.
  5. Fold the bottom of the wrap over the filling, fold in the sides and roll the wrap the rest of the way up.
