22 Mar 5 Minute Meal of the Week: The Ultimate French Omelette

Ingredients:
- 3x Eggs (room temperature – it’ll speed up cooking time!)
- 2 Knobs of butter
- 1 tsp finely grated parmesan (or vegetarian alternative)
- 3 tbsp finely grated gruyère
- 2-3 Chopped tarragon leaves
- 1 tbsp chopped chives/parsley
Instructions:
- Prep your ingredients so that you’re ready to add them in quick succession.
- Warm a small frying pan on medium heat.
- Crack the eggs into a bowl and beat with a fork (but not as much as you would do for scrambled eggs). Season with salt, pepper and the parmesan.
- Add one knob of butter to the hot pan (it should bubble and sizzle but not brown) and then add the eggs.
- Here’s the important bit: Let the eggs bubble slightly for a couple of seconds, then take a wooden fork or spatula and gently draw the mixture in from the sides of the pan a few times, so it gathers in folds in the centre. Leave for a few seconds, then stir again to lightly combine uncooked egg with cooked. Leave briefly again, and when partly cooked, stir a bit faster, stopping while there’s some barely cooked egg left. With the pan flat on the heat, shake it back and forth a few times to settle the mixture. It should slide easily in the pan and look soft and moist on top. A quick burst of heat will brown the underside.
- Tip the omelette onto your plate, folding it in half as you do so. Rub over the second knob of butter to serve.
