5 Minute Meal of the Week: Turkey & Spring Onion Wraps

Have some leftover turkey or chicken from a Sunday Dinner? Ditch the boring sandwiches and add some interest to your work lunch with these quick and easy wraps!

 

Ingredients:

 

  • 2tbsp Mayonnaise
  • 2tbsp Pesto
  • 6 Spring Onions
  • ½ Cucumber
  • 4 Lettuce leaves
  • 250g Cooked Turkey/Chicken
  • 4 Flour Tortillas

 

Instructions:

 

  1. Mix together the mayonnaise and pesto in a small bowl.
  2. Finely slice the spring onions and grate the cucumber.
  3. Shred the turkey/chicken with two forks.
  4. Divide the shredded turkey/chicken, sliced spring onions, grated cucumber and lettuce leaves between the tortillas.
  5. Drizzle the pesto mayonnaise over the fillings and roll up the wraps.
