26 Apr 5 Minute Meal of the Week: Mediterranean Pita Pockets
Don’t worry about rushing with this one! This recipe can easily be prepared within in 5 minutes so be careful when chopping!
Ingredients:
- 1 Cucumber
- 2 Large Tomatoes
- 1 Bunch of fresh parsley
- 120g Olives
- ½ Red Onion
- 200g Feta
- 300g Hummus
- 4 Pita Pockets
Instructions:
- Chop the cucumber, parsley and olives and put in a medium sized bowl. Slice the tomatoes and red onion and add to the bowl.
- Crumble the feta into the bowl.
- Spread the hummus inside the pita pockets.
- Stuff the pockets with the vegetable mix.
