26 Jul 5 Minute Meal of the Week: Couscous Salad
You can always count on couscous for a speedy meal. Made from semolina flour, couscous is technically a type of pasta!
Ingredients:
- 100g Couscous
- 100ml Vegetable stock
- 50g Frozen peas
- 50g Broad beans
- Fresh mint
- Fresh basil
Instructions:
- Make up 100ml of vegetable stock. Add to a bowl of the couscous and cover for 5 minutes until the stock has been absorbed.
- Meanwhile, simmer the frozen peas, and broad beans in water for 3 minutes. Drain.
- Fluff the couscous with a fork and combine with the couscous, peas, broad beans and pepper.
- Roughly tear the fresh mint and basil to serve
