5 Minute Meal of the Week: Stuffed Moroccan Pitta

Tired of the same old plain and boring sandwich? Try this Moroccan pitta pocket for a flavourful, quick and easy lunch!

 

Ingredients:

 

  • ½ Red pepper
  • 2 Pitta pockets
  • 4 Falafels
  • 4 tbsp hummus
  • Handful of rocket leaves

 

Instructions:

 

  1. De-seed and slice the red pepper.
  2. Spread the hummus inside each pitta pocket.
  3. Place the falafel, pepper slices and rocket inside the pitta pockets.
