5 Minute Meal of the Week: Carrot and Raisin Sandwiches

Your lunchtime sandwiches don’t have to be boring! Let this vegetarian recipe add interest to your office lunch or surprise your guests as you serve an afternoon tea packed with flavour!

 

Ingredients:

 

  • 1 Large Carrot
  • 2tbsp Raisins
  • 1tbsp Olive Oil
  • ½tbsp White Wine Vinegar
  • 1tbsp Chopped Mint
  • 4-6 Slices of Brown Bread
  • 3tbsp Humous

 

Instructions:

 

  1. Peel and grate the carrot.
  2. Mix the grated carrot, raisins, olive oil and white wine vinegar together in a small bowl. Season and add the chopped mint.
  3. Spread the humous over the slices of bread, top with the carrot and raisin mix and sandwich with the other slices of bread.
  4. Cut the sandwiches into the shapes you wish.
